Christmas In Australia!

Suppose that you were lucky enoiugh to be able to spend Christmas in the Southern Hemisphere.  Believe it not, when Christ was born winter did not prevail over the whole globe.  In some places, e.g. Australia, it was summer when Christ was born.  So what food would you prepare for a Christmas if you were in Australia.  Actuallly if you are stupid enough, you could have a BBQ for Christmas no matter where you are in the world.

SUGGESTED MENU 
 

PREPARATION
 
Cold Prawn Rolls:
  • 1 lb. Prawns
  • Garlic
  • Bread Slices
  • Cooking Oil
     
Remove all shell from prawns and pulp the prawns using a rolling pin.  Add garlic to taste.  Cut crust from bread slices, then roll the slices flat with the rolling pin.  Spread the prawn mix over the slices, then roll each slice into a cylindrical shape.  Fry the rolled bread until golden brown. (use a toothpick to hold)  Allow to cool.  Garnish with lemon and parsley.

BBQ'd Lamb Chops: 

  • Enough chops to feed the lazy people who did not stay at home to cook for themselves.
  • BBQ (Grill)
  • Mint Sauce
     
Simply cook the chops on the grill turning frequently to avoid burning them.  Cook until pink in the center.  Garnish with parsley and serve with mint sauce.

BBQ'd Sausages:

  • Enough sausages to feed the lazy people who did not stay at home to cook for themselves.
  • Barbecue (Grill)
     
Poke several holes in the sausages with a fork.  This helps to stop them splitting.  Boil the sausage in water for approximately 10 minutes to remove excess fat.  Grill until brown.  Serve with ketchup or BBQ sauce.  As both are easy to wash out of your shirt

Curried Sauteed Onions:

  • Enough onions to feed the crowd
  • Cooking Oil
  • Curry Powder
Finely chop the onions and saute in oil, adding curry powder to taste.  When cooked allow to stand briefly on paper towel to remove excess oil.  Serve over the chops and sausages.

Potato Salad:

  • Potatoes
  • Onions
  • Hard Boiled Eggs
  • Mayonnaise
Boil the eggs for 8 minutes and allow to cool.  Peel the potatoes and cut in cubes.  Boil potatoes until they have a slight "bone" in them.  Finely dice the onions (peel them first).  Deshell (peel) the eggs and finely dice.  Mix cooked potato, eggs, onions and mayo and cool before serving.  Garnish with parsley.

Sweet Green Salad:

  • Lettuce
  • Sugar
  • Mayonnaise
Finely cut the lettuce.  Just before serving add sugar and mayo and mix well.  Serve with other food.
