BAKED BEAN CASSEROLE


Ingredients:
3 cans kidney beans
3 medium onions, thinly sliced
1/4 cup wheat germ
1 or 2 apples, pared and sliced
1/3 cup unsulphered molasses
6 TBLsps. bourbon
2 or 3 cloves garlic, crushed
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1/8 tsp. marjoram
3 whole cloves
1 bay leaf
1/4 tsp. Tabasco
3 or 4 slices bacon, cut in 1/3rds

Drain beans; reserve liquid. Cover bottom of greased 2-1/2 qt. casserole with 1/3 of the beans. Cover with sliced onions; sprinkle with 1/3 wheat germ. Arrange apple slices on top. Combine molasses, bourbon, garlic, and sasonings and pour over beans. Top with bacon. Bake covered at 350 degrees for 1 hour. Reduce heat to 300 degrees and bake uncovered for another hour. If mixtue become dry add some reserved bean liquid.
Serves 8.
