Ingredients: EASY BAKING POWDER BISCUITS
1 1/2 cups all-purpose flour
1/4 cup sugar
2 1/2 tsps. baking powder
1/2 tsp. salt (optional)
2 TBLsps. plus 2 tsps. shortening
1/2 cup skim milk
A little skim milk for brushing topsHeat oven to 450 degrees. Combine flour, sugar, baking powder and salt (if used) in medium bowl. Cut in shortening with pastry blender (or 2 knives) to form coarse crumbs.
Add milk, stir until dry ingredients are just moistened. Place on floured surface. Pat or roll into circle slightly more then 1/2 -in. thick.
With 2-in. round biscuit cutter, cut 8 or 9 biscuits. Press dough scraps into ball. Flatten again. Cut remaining 3 or 4 biscuits. Place on ungreased baking sheet. Brush tops with milk. Bake at 450 degrees for 6 to 8 minutes or until tops begin to brown. Serve warm. Tip: Cover dough with waxed paper. Press and flatten with 8 or 9-in round cake pan until dough is desired thickness.
Serves 12.
This biscuit recipe is very low in cholesterol and only has a 100 calories and 3 grams of fat per biscuit.
