CARIBBEAN YAM BAKE


Ingredients:
3 cups cooked, mashed yams (2 lbs.)
2 eggs
1/2 cup brown sugar, packed
1/4 cup margarine or butter, melted
2 TBLsps. dark rum (optional)
1/2 tsp. ground nutmeg
Zest and juice from 1 lime
2 bananas, peeled, diced

In large bowl, combine mashed yams with eggs, brown sugar, margarine, rum (if used), nutmeg, lime zest and juice until thoroughly mixed. Fold in diced bananas. Turn into shallow greased 5-cup baking dish. Bake in 375 degree oven 40 minutes.
Serves 6.
