CARIBBEAN YAM BAKE
Ingredients:
3 cups cooked, mashed yams (2 lbs.)
2 eggs
1/2 cup brown sugar, packed
1/4 cup margarine or butter, melted
2 TBLsps. dark rum (optional)
1/2 tsp. ground nutmeg
Zest and juice from 1 lime
2 bananas, peeled, dicedIn large bowl, combine mashed yams with eggs, brown sugar, margarine, rum (if used), nutmeg, lime zest and juice until thoroughly mixed. Fold in diced bananas. Turn into shallow greased 5-cup baking dish. Bake in 375 degree oven 40 minutes.
Serves 6.
