CREOLE SAUCE
Ingredients:
2 TBLsps. butter
1 TBLsp. onion (may be increased to 1/4 cup)
6 olives, chopped
1/2 green pepper
1 1/2 cups tomatoes
1 TBLsp. capers
1/3 tsp. salt
Few grains cayenne
1 tsp. sugar, white or brown
1/2 cup chili sauce
1 TBLsp. flour
1 TBLsp. waterMelt butter over slow fire. Add onions and olives and cook covered 2 minutes. Add pepper, tomatoes, capers, salt, cayenne and sugar. Cook until sauce is thick. Add chili sauce. To hasten thickening process, add flour and water. (I always double this recipe to make a larger amount.)
