EASY POLENTA MARINARA

Ingredients:
1 can (about 14 ozs.) fat-free reduced sodium chicken broth
1 cup yellow cornmeal
3 TBLsps. grated Parmesan cheese
1 1/2 cups prepared marinara sauce
1/2 cup (2 ozs.) shredded part-skim mozzarella cheese

Preheat oven to 375 degrees. Grease 9-inch square baking dish; set aside. Combine broth and 1 cup water in medium saucepan. Whisk cornmeal into liquid. Bring to a boil over medium-high heat, stirring to prevent lumps. Reduce heat to medium-low; cook about 7 minutes or until mixture is very thick, stirring constantly. Stir in Parmesan cheese; season with salt and pepper to taste. Pour hot polenta into prepared dish, spreading evenly with spatula. Pour marinara sauce over polenta; sprinkle with mozzarella cheese. Bake 10 minutes or until cheese is melted and sauce is heated through. Makes 6 servings.
