Ingredients: EASY SCRAMBLED EGGS WITH TOMATOES
5 eggs
3/4 cup cottage cheese
Dash salt
Tabasco sauce, optional
1 TBLsp. butter or margarine
1 pkg. (10 oz.) whole spinach leaves
4 slices white bread
Black pepper, optional
Chives
6-8 cherry tomatoes
Olives, for garnish, optionalIn a bowl, combine eggs, cottage cheese, salt and a few drops of Tabasco sauce, if used.
In an omelette pan, melt butter. Add egg mixture. Cook over medium-high heat until mixture starts to set. Turn heat off. Let sit in pan for a few minutes. Meanwhile, heat spinach until wilted. Toast bread. Place 1/4 of spinach on each piece of toast. Top with scrambled eggs. Sprinkle with a little pepper and chopped chives. Serve with tomatoes and olives, if used. This is very good served with small sausages and/or bacon or ham.
