Ingredients CURRIED CHICKEN, SWEET POTATOES, & RICE
Vegetable Cooking Spray
2 tsps Olive Oil
1 Pound Skinned And Boned Chicken Breast Halves,
Cut Into Cubes
3 Cups Reduced-Sodium Chicken Broth
1 1/2 Cups Peeled And Diced Sweet Potato
1 Cup Chopped Red Pepper
1/4 Cup Golden Raisins
2 tsps Curry Powder
1/4 tsp Freshly Ground Pepper
1 Cup White Basmati Or Other Long-Grain Rice, Uncooked
1/4 Cup Plus 2 Tblsps Chopped Dry Roasted Peanuts
1/4 Cup Plus 2 Tblsps Minced Green OnionsCoat a Dutch Oven With Cooking Spray:
Add Oil, And Place Over Medium-High Heat Until Hot.
Add Chicken And Saute Until Lightly Browned.
Stir in Broth, Sweet Potato, Red Pepper, Raisins, Curry Powder,
And Ground Pepper; Bring To A Boil.
Add Rice; Cover, reduce Heat, And Simmer 20 to 25 Minutes
Or Until Liquid Is Absorbed. Serve In Bowls;
Sprinkle Each Serving With 1 Tblsp Peanuts
And 1 Tblsp Green Onion.
