EASY LOW-FAT FRUIT DRESSING
Ingredients:
1/4 cup pineapple juice
1/4 cup orange juice
3 TBLsps. lemon juice
2 medium eggs
1/8 tsp. salt
2 TBLsps. sugarCombine fruit juices in top of double boiler; heat over boiling water. Beat eggs slightly with a fork in small bowl; beat in salt and sugar. Slowly stir a little of the hot fruit juices into egg mixture, stirring constantly. Return all to double boiler and cook 2 minutes longer over hot (not boiling) water, stirring constantly. Cool and chill. Serve with fruit salad. Makes 1 cup. Total calories: 324; individual serving: 1 TBLsp. 20 calories.
