Ingredients: HOLIDAY CAULIFLOWER
1 Large head cauliflower, broken into florets
1/4 cup green pepper, diced
8-oz. jar mushrooms, sliced and drained
1/4 cup butter
1/3 cup all-purpose flour
2 cups milk
4 oz. Swiss cheese, shredded
2 TBLsps. pimentos, diced
1 tsp. salt
Garnish: paprikaIn a large saucepan, cook cauliflower in a small amount of water for 6 to 7 minutes or until tender; drain well. In a medium saucepan, saute green peppers and mushrooms in butter for 2 minutes. Add flour; gradually stir in milk. Bring to a boil; boil for 2 minutes, stir in cheese until melted. Add pimentos and salt. Place half of the cauliflower in a greased 2-quart baking dish; top with half of the sauce. Repeat layers. Bake uncovered at 325 degrees for 25 minutes or until bubbly. Sprinkle with paprika. Makes 8 to 10 servings.
