EASY HOLLANDAISE SAUCE


Ingredients:
1 egg yolk
1/2 stick cold butter
1-1 1/2 TBLsps. lemon juice

Place egg yolk, slightly beaten, lemon juice and butter in saucepan. Cook over low heat, stirring constantly, until butter melts and sauce is slightly thick.
yield: 1/2 cup sauce. Recipe can be doubled.
