Ingredients: IRISH POTATO CASSEROLE
8-10 potatoes
8 ozs. cream cheese, softened
1/2 cup melted butter
1/4 cup chopped chives
1 garlic clove, minced
2 tsps. salt and pepperCook potatoes 30 minutes, or until tender; drain and mash. Beat cream cheese until smooth; add potatoes and all ingredients except paprika; beat until just combined.
Spoon mixture into a lightly buttered 2 quart casserole, sprinkle with paprika, cover and refrigerate overnight. Remove from fridge 15 minutes before baking. Uncover and bake at 350 degrees or until thoroughly heated.
