Ingredients: LOW-FAT POTATO SOUP
3 or 4 large potatos
1 medium onion
3 cups skim milk
1/4 cup Butter Buds
Salt and pepper to tastePeel and dice potatoes and onion, cover with water, and bring to a boil. Lower the heat and cook until tender, about 35 minutes.
Drain three quarters of the water off and add the milk. Simmer over low heat for 15 to 20 minutes. Mash the potatoes with a hand masher to make the soup thicken. Add the Butter Buds, salt, and pepper. Serve with fat-free soda crackers. Serves 4.
