STIR-FRIED MUSHROOMS WITH BACON

Ingredients:
4 slices bacon, cut in 1/2 inch pieces
8 ozs. fresh mushrooms, sliced
1/4 cup cooking sherry
1/4 cup finely chopped onion (optional)

Stir fry bacon until crisp. Remove bacon, reserving drippings. Add mushrooms and chopped onion if desire. Stir fry for 5 to 10 minutes. Drain off excess fat. Add wine and bacon and simmer for 3 minutes.
