POTATO DUMPLINGS


Ingredients:
3 lbs potatoes (not baking)
Salt
1 large egg, slightly beaten
6 slices bread, croutonned--browned
1 cup flour, more if needed

Simmer potatoes until done. Peel, and put through ricer into large bowl. Salt. Work in the egg and add croutons. Add flour, working in with hands until right consistency to form dumplings. Roll dumplings in flour.

Boil water in large heavy pot, and keeping at hard boil, drop dumplings in and remove them as they float to top. Leftover dumplings can be cut in half, floured lightly and fried in hot fat. Delicious!
