EASY POTATO SOUP

Ingredients:
1 cup water
2 cups potatoes, peeled and cubed
1/2 tsp. salt
1/2 tsp. pepper
10 3/4 ounce can cream of chicken soup
1 3/4 cup milk
1 cup sour cream
8 slices bacon, crisply cooked and chopped
1 Tblsp. fresh parsley, chopped
1 onion, finely chopped
Garnish: Cheddar cheese, shredded

In a 3-quart saucepan, combine water, potatoes, salt and pepper; bring to a boil. cover and simmer, stirring frequently, for about 10 minutes or until potatoes are tender. Gradually add soup and milk, stirring constantly. Stir in sour cream, bacon, parsley and onion; heat through. Top with cheese. Makes 2 to 4 servings.
