POTATO & SPINACH CASSEROLE
Ingredients:
6 to 8 large potatoes, peeled cooked and mashed
8 ozs. sour cream
2 tsps. salt
1/4 tsp. pepper
2 TBLsps. chives, chopped
1/4 cup butter
10 oz pkg. frozen spinach, thawed, drained and chopped (or buy frozen pkg. chopped spinach)
1 cup Cheddar cheese, shreddedIn a large bowl, combine all ingredients except cheese. Spoon into a greased 2 quart casserole dish. Bake uncovered at 400 degrees for 15 minutes. Top with cheese and bake 5 minutes longer.
