EASY SHRIMP CREOLE

Ingredients:
1/3 cup oil
1/4 cup flour
2 cups chopped onion
1/2 cup green pepper
1 cup chopped celery
2 (8 oz.) cans tomato sauce
2 lbs. shrimp
2 tsps. salt
1/4 tsp. black pepper
1/8 tsp. red pepper
1/4 to 1/2 cup water
1 1/2 tsp. parsley
1 1/2 tsp. green onion tops, chopped

Make golden brown roux of oil and flour. Add onion, green pepper and celery and cook slowly until clear. Add tomato sauce and cook covered over low heat for 20 minutes. Add shrimp (may be added raw or boiled; if raw, cook until pink), salt, black and red pepper. Add water, if necessary. Cook 10 to 15 minutes. When ready to serve, stir in parsley and onion tops. Serve on rice. Serves 8.
