VILLAGEOISE SALADE


Ingredients:
6 cups torn spinach
6 cups lettuce
1 red onion, sliced thinly
1 apple, sliced thinly
3/4 can sliced heart of palm
1 1/2 cups croutons

Mix Together. (below for dressing)

Dressing
4 slices bacon
2 eggs
2/3 cup vinegar
1/4 cup sugar

In large skillet, saute 4 slices bacon. Break 2 eggs into a sieve (or colander), set over a bowl. Add 2/3 cup vinegar and 2/3 cup water and force the mixture through the sieve by stirring with a spoon. Stir in 1/4 cup sugar. Add mixture to the bacon drippings and cook over low heat until thickened and creamy. Season this dressing with salt to taste and serve warm over salad.
