Ingredients: PASTA WITH VODKA SAUCE
5 cloves of garlic coarsely chopped
2 shallots finely diced
1 onion finely diced (this might be better finely sliced)
2 14 oz. cans of whole peeled tomatoes with juice (please chop in can before adding to recipe)
1/2-3/4 cup vodka
3 tblsp Olive Oil
Red pepper flakes (about 1tsp)
Salt to taste
Oregano to taste
2 tblsp butter
1/2 pint of cream
20 basil leaves, chopped coarsely
Shredded parmesan (NOT KRAFT!)
Fresh linguine...(like deGiorno)Directions: Saute garlic, shallots and onion in 3 tablespoons of olive oil for a few minutes. Next, add in two (14 oz) cans of whole peeled tomatoes. Bring to a boil, adding salt and oregano on the way to taste, plus extra red pepper if you like it hot. Simmer a little while. Put in vodka and bring back to a boil. Once it boils down a good bit (so you don't get the big vodka fumes when you sniff) let it simmer while you cook pasta and when pasta is almost done slowly add in a half pint of cream...let it bubble again and put in the basil and throw in 2 tablespoons of butter. You may want to add cracked pepper now. Strain the pasta and put it in with the sauce and toss. Add a good bit of shredded parmesan to it while you toss it.
